Meatloaf Muffins

In August I saw a recipe on a quilting blog and it had 4 ingredients:  2# hamburger, 2 eggs, 1 cup water and 1 box of stuffing.  I changed the recipe to have lower calories and lower WW points.
The photo shows them ready to go in the oven.  They get nice and crusty brown on top.

The following is my recipe to make it 3 WW points for each meatloaf:
1 # ground turkey 99% lean
1# ground beef 93% lean
2 eggs
1 cup of water
1 Tbsp Worcestershire sauce
3 Tbsp ketchup
basil...garlic pepper...minced garlic
1 box of stuffing mix..I use Stove Top stuffing mix 6 oz

Mix and make into 12 generous muffins of meatloaf
Spray muffin pan and bake 350° for 1 hour

These are also very good leftover for sandwiches and they freeze well.
For an idea for a lunch:
I used a Joseph's pita and smashed some leftover roasted squash and cut up a meatloaf muffin
and it makes a WW 4 point lunch
Enjoy............

Smiles and hugs....Caryl
