Meatloaf Muffins

In August I saw a recipe on a quilting blog and it had 4 ingredients:  2# hamburger, 2 eggs, 1 cup water and 1 box of stuffing.  I changed the recipe to have lower calories and lower WW points. The photo shows them ready to go in the oven.  They get nice and crusty brown on top.   The following is my recipe to make it 3 WW points for each meatloaf: 1 # ground turkey 99% lean 1# ground beef 93% lean 2 eggs 1 cup of water 1 Tbsp Worcestershire sauce 3 Tbsp ketchup basil...garlic pepper...minced garlic 1 box of stuffing mix..I use Stove Top stuffing mix 6 oz Mix and make into 12 generous muffins of meatloaf Spray muffin pan and bake 350° for 1 hour These are also very good leftover for sandwiches and they freeze well. For an idea for a lunch:  I used a Joseph's pita and smashed some leftover roasted squash and cut up a meatloaf muffin and it makes a WW 4 point lunch Enjoy............ Smiles and hugs....Caryl

Chocolate chip cookies

This is a mudhustler recipe  https://themudhustler.com/muds-cookies When I saw this recipe I knew I had to try it.  I haven't made cookies for at least 3 years and we have always liked chocolate chip cookies.  I like to put peanut butter between two cookies....yummm! This makes large cake-like cookies....not crisp....and very good! Each cookie is WW 1 point!!  This recipe makes 8 large cookies! 1 scoop Devotion Nutrition angel food cake protein powder ½ cup all purpose flour 1 tsp baking soda ½ tsp salt 1/3 cup Sukrin Gold brown sugar substitute ½ cup non fat plain Greek yogurt 2 tsp butter extract 1 tsp vanilla extract 1 egg 1/3 cup chocolate chips  Mix and scoop 8 servings on to cookie sheet sprayed with nonstick spray Bake 350° for 12 - 15 minutes Enjoy! I put pbfit between 2 of these cookies for 3 points and it was a very satisfying substitute for the cookies of my past with real peanut butter.  IT IS ALL about the CHOICES we make. Comparing apple cider donuts

 I am glad to have some alternative choices that are very good!  The donut on the left is WW 1 point!                                   And the Trader Joe's donut on the right is WW 14 points! I put Sukrin Gold brown sugar substitute and cinnamon on top of the ones I made this time.  Very tasty! Taste test of these donuts.....the 14 point donut was not worth spending all those points!  I have been making this recipe for 2 years and it is one of our favorites. This recipe is quick and easy to make. The original recipe is from emilybites.com https://emilybites.com/2015/02/bubble-chicken-pot-pie-casserole.html Here is my version of this recipe: 2 cups veg mix Trader Joe's Mirepoix 14.5 oz diced celery, carrots, onions      OR 2 cups Trader Joe's Healthy 8 veggie mix chopped veg 3 cups shredded chicken (from Costco roast chicken) or Kirkland grilled chicken strips 1 cup frozen peas mixture of seasonings:  dried thyme, basil, seasoned garlic pepper Trader Joe's turkey gravy 17.6 oz (2 cups) 1 (7.5 oz) can Stater Bros. homestyle refrigerated biscuit dough, 10 biscuits cut into quarters 1 cup shredded sharp cheddar cheese plus small amount FF shredded cheese Preheat oven 350° 13 x 9 baking dish mist with cooking spray In skillet with spray or tiny olive oil cook veg 7-8 minutes, stirring occasionally. Apple Cider Donuts

This is a Mudhustler recipe.  Here is the link to his recipe  https://themudhustler.com/donuts Here is the recipe and my version: 2 scoops Devotion Nutrition Angel Food Cake protein powder 1 cup Kodiak Cakes buttermilk  high protein pancake mix 1 tsp baking powder 1 tsp ground cinnamon 1 tsp apple pie spice 1/4 cup Sukrin gold brown sugar alternative 1 tsp vanilla 1/4 cup unsweetened applesauce 1/2 cup spiced apple cider (Trader Joe's brand) 1 cup water Mix and spoon into 12 regular sized donut pans Makes 12 servings Bake 375° for 25 minutes (this is longer than original recipe) I rubbed some Truvia sugar substitute on the tops of the warm donuts. Each donut is WW 1 point and 6.6 carbs. Compare that to other apple cider donuts that are 14 to 16 WW points! These don't taste exactly like a regular donut BUT they are really good and because of the high protein they are very filling.  Enjoy! Smiles and hugs....Caryl
