Chocolate banana bars

Last week I saw a photo on instagram by Marianne  @ww.italianwifey She had made chocolate banana bread one day and the next day made them in her Wilton mini loaf pan. I decided I would not use her recipe....but make my Banana Bread Bundt Cake and change some ingredients and make it chocolate.  Here is the photo with batter in the pan ready to go into oven. Chocolate Banana Bars 3/4 cup Kodiak Cakes dark chocolate 2 packets Devotion Nutrition protein powder Brownie Batter 1 packet Devotion Nutrition protein powder Angel Food Cake 1 Tbsp + 1 tsp baking powder 2 Tbsp unsweetened cocoa powder 2 ½ - 3 bananas mashed (this measures to a heaping cup) 2 eggs 1 tsp vanilla 1 cup water Place the batter in the 8 mini loaf pan These are 2 points each on WW purple plan They are a perfect treat........cross between banana bread and cake.  We are missing the brownie muffins at Souplantation....they were about half the size of these BUT they were 8 points!!  AND my bars are a l...

End of summer challenge

The summer challenge has ended and the photo above shows the pages all filled in.  I have charts all filled in also that I kept a running log of accountability of the goals I had for the challenge. My main focus was to MOVE MORE....and I did keep working on that the whole time.  I filled in each day because I was mindful of everything I wanted to accomplish.  I did journal every single day about my day of eating and exercise, etc. I compared my totals to last year's summer challenge and my blue dots were exactly the same!  I had 6 less daily points only days.  But I had 24 more days of 30 minutes of exercise and 20 more days of my fitbit 30 minutes active than last summer.  I started paying attention to the fitbit red dots and trying to get over 250 steps as many hours during the day as possible.  But I did gain 2.4#....last summer I gained 2.0#  It is disappointing but I am a slow loser and my weight loss has been stalled for a lot of mo...

Blueberry muffins

I have made these muffins 3 times since last Saturday!!  I found the recipe on the internet.  I couldn't find the recipe I had seen on IG and this recipe came up on you tube when I did a search....and it looked quick and easy so I tried it.....again and again.  It is 1sp for 1 muffin.  The original recipe is  https://www.youbrewmytea.com/2017/03/3-ingredient-blueberry-muffin-recipe.html You can print out her recipe and she also has photos on her blog. My version: 1 banana, mashed add ½ cup water and stir add 1½ cups Kodiak Cakes buttermilk flapjack and waffle mix and 1 tsp cinnamon and stir. Fold in 1/2 cup frozen blueberries. Add to sprayed silicone muffin pan Makes 12 muffins Bake 350° for 20 minutes. 1 muffin is 1sp 2 muffins 2 sp 3 muffins 4 sp 4 muffins 5 sp This is very quick and easy to make and so delicious you can't eat just one! Enjoy!

Two-ingredient dough

 I have been using the 2-ingredient dough for making pizza dough since 2013 when I found it on Pinterest.  I started using it for making other things last year.   Cinnamon rolls and bagels are two things I have tried.  I have a picture tutorial on how I have made the dough.  Use 1 cup of self rising flour and 1 cup of fat free plain Greek yogurt.  Stir them together in a bowl................  Keep stirring until you have a ball......  Now for the cinnamon rolls........ roll out into a rectangle.................  I spray lightly with I can't believe it's not Butter!  Spread a mixture of ¼ cup Sukrin Gold (brown sugar substitute) and 1 tsp cinnamon. Roll up and cut into 12 pieces. Place on parchment paper on a cookie sheet and flatten and add an egg wash. Bake at 375° for 20 minutes.  After you take them out of the oven and while they are still warm.... add a mixture of ¼ cup Swerve confection sugar and ...

Blueberry donuts

This is another recipe from mudhustler on WW Connect and mudhustler_official on IG.  AND he has a website with recipes for low point foods.  I saw his post for blueberry donuts on IG yesterday and I had written the recipe down from his website to try someday.....TODAY was someday!  I followed the recipe he put on IG and it is a little different than the one on his website. Here is the way I made them today: 2 scoops of Devotion Angel Food Cake protein powder 1 cup Birch Benders high protein pancake mix 1 Tbsp baking powder 1 tsp cinnamon 1 cup cold water ½ cup fresh blueberries 1/3 cup unsweetened applesauce Mix dry ingredients and add the blueberries then add the water and applesauce Spoon into sprayed regular sized donut pans Bake at 375° for 15 minutes. Makes 12 regular sized donuts at 1 sp each. Enjoy........... Smiles and hugs....Caryl
